Pork loin with pineapple relish

My favorite way of eating pork has always been in the form of bacon cooked to a crisp, a side to a stack of pancakes, and dipped in maple syrup. So the other day, as I was perusing the meat section of my local grocer, I got inspired to venture into a different part of the pig and picked up some pork loin.

Pork loin with pineapple relish
Prep time: 25 minutes
Makes 2 servings.

  • 4 2oz pork loin chops
  • 1 8oz can of pineapple - diced
  • 1 medium sized white onion - chopped
  • 1 jalapeƱo pepper - diced without the seedds
  • 3 t sesame oil
  • 2 tsp black pepper
  • 2 tsp sea salt
  • 2 T sesame seeds

Heat 1 tsp of sesame oil in a pan. Sautee onions and pepper until browned. Add to diced pineapple.

Heat 2 tsp of sesame oil in pan. Sprinkle both sides of each pork loin with 1/2 tsp of sesame seeds, 1/2 tsp of black pepper and 1/2 tsp of sea salt. Sautee each side for 3-4 minutes. Transfer pork to plate and serve with pineapple relish.
