This isn’t the lunch lady’s tuna salad. Influenced by the Mediterranean, this tuna is prepared with olive oil, red grapes, Bubbies pickles and olives. A sweet and salty variation of this tuna fish sandwich lends itself to those who crave a more sophisticated tuna salad.

Tuna fish salad
Prep time: 15 minutes
Makes 2 servings.

  • 1 can tuna
  • 1 TB olive oil
  • 1 TB Smart balance Mayonnaise spread
  • 1 pickle - chopped
  • 4 olives - chopped
  • 1/2 cup red grapes - halved

Mix tuna with 1 TB of olive oil and 1 TB Smart Balance spread. Add pickle, olives and 1/2 cup of red grapes. Eat with your favorite bread.
