We use a high-fiber (8 grams each), multi-grain Thomas’ Light English Muffin and egg whites as the foundation of this delicious breakfast. We topped it with mangoes today (gotta eat them while they’re still in season) and can’t wait to try berries or bananas next time.

Makes 1 serving.
- 1 Thomas’ Light English Muffin
- 1 t canola oil
- 1 TB Organic Maple Syrup
- 1/2 cup mango (or any fruit)
- 2 egg whites
Slightly toast English muffin. Coat pan with 1 t canola oil and heat at medium heat. Beat 2 egg whites. Dip toast in egg whites and cook for 2 minutes on each side. Transfer to plate and top with fruit and syrup.
Additional option: For added protein cook up a turkey breakfast sausage or a Morningstar breakfast patty. Only adds about 100 calories more per serving.
